I am weak for those silky soft Neapolitan pizzas that arrive piping hot still bubbling from the brick oven straight onto my plate. A perfect golden crust colour. Not chewy or crunchy just fluffy and springy. That is just what a pizza deserves to be.

Pizza purist heaven exists at Da Michele’s, in Naples with only the « Marinara » and « Margherita » options available. Michele’s pizzas are simple and use only the freshest local ingredients; fior di latte, cow-milk mozzarella from Agerola and sweet San Marzano tomatoes.
While nothing can come close to Napoli’s pizza mecca, I have rated a handful of savoured Parisian pizzas after sampling many of the city’s renowned institutions.
1. Bistrot Napolitain

This institution serves the best pizza in Paris; deliciously authentic soft and springy Neapolitan pizzas topped with fresh ingredients.
I would only venture here if you really want to try the pizzas as the ambience is cheesy. It is quite pricey, (€16 for a ham pizza), the service is rushed and it is always packed so make sure to make a reservation. Pay particular attention to the tiramisu (€10) and semifreddo. Many reviewers complain that soda is only available in cans.
2. O'scià

Although it does not hit the standard of the Bistrot Napolitain in terms of pizza quality, the unpretentious O'scià has a lively, fun atmosphere and good service. It is a perfect place to enjoy a fantastic pizza in a casual trattoria setting right off the bustling rue Montorgueil - great for a night out with friends. Pizza purists take note - the buffalo mozzarella pizza does not come with tomato sauce. There is nothing more delectable than finishing an authentic Italian meal with a delicious panna cotta.
3. Pizzeria Positano

It is probably better this restaurant does not take reservations; that way you can casually walk by and make sure that the pizzaiolo is short, blonde and wearing thick-rimmed glasses. If not, you can continue to pizzeria number five on the list, which is just around the corner. Mr. Thick Glasses Pizzaiolo makes a deliciously springy pizza. Unfortunately there is no buffalo mozzarella option available here and I would not order anything but the pizza as once I found a bit of cling film in my pasta dish. Pizzeria Positano is lively and fun so get there early to escape the long lines! I would go for dessert at Amorino on the perpendicular Rue Guisarde for an ice cream in the summer and across the road to La Crêperie des Canettes for a toasty crêpe in the winter.
4. La Briciola

Situated in the heart of the trendy Marais, La Briciola serves up inventive top-notch pizzas topped with fresh ingredients. The décor is modern and simple and the ambience is lively, almost raucous. The service is mediocre but grab some friends, order a good wine to pair with those delicious pizzas and you won’t be paying attention to the rest.
